I always make extensive use of the 'Undo' button. In fact, I don't think GoodSol would be much fun without it... But am I cheating? How often do you 'Undo' or worse yet, 'Undo to Snapshot'?

No, I certainly don't consider undo cheating.

I use undo a lot. There are some games where it is almost essential.

Is there a way to turn off the sound in the game. I'd like to listen to my CD as well as playing the game at the same time.

Main games screen - options - preferences - uncheck Sound. I always do that.

Yeah, I use Undo alot. I think that's part of the fun of the game... you can replay a certain game again and again until you beat it!

If undoing were illegal, or cheating, would this feature be present in the games? Obviously not. Since Solitaire is a solitary game by definition, anybody can decide to add their personal rules, for instance not to Undo, or not to use the easier options even if the games permit them. There is no partner with whom you have to to coordinate the personal rules that are not part of the fixed game rules.

Undo and Snapshot are great, fun tools. they allow one to choose an option, without losing the game, when the other option(s) might be the winning move(s).

The way I handle undos depends on my mood. Sometimes I feel like treating PGS as a puzzle (especially in a game like Free Cell) and so will extensively use undos. In this case, I consider myself to have solved the game, rather than won it. Other times, I treat it more as a game, in which case I use undos as little as possible.
